He then treats the wine like fine Champagne, aging it on lees for 12 months. The resulting wine bursts with fresh red fruit character––think strawberry and raspberry––balanced by crisp acidity and fine bubbles.

Gold Top Chardonnay

Delicious! Light, not sweet, but not tart, either. Low acidity. Pairs beautifully with seafood, shellfish, salads, and fruit. But, you can serve it with anything because its that good.
